Tomato Salsa
6 medium tomatoes
1 large red onion
6 spring onions
½ bunch fresh coriander (1/4 cup chopped)
2 limes (juice only)
1 Tablespoon vinegar
4 Tablespoons olive oil
Salt and pepper to taste
Dice and combine all the ingredients

Pineapple salsa
1 medium pineapple
1 red pepper
½ red onion
¼ cup chopped coriander
3 Tablespoons lime juice
¼ teaspoon fine salt
Dice and combine all the ingredients
Burger slaw
Cabbage, shredded
Carrots, grated
Mayonnaise
Salt
Combine the ingredients. Red and green cabbage together with grated carrot and baby spinach make a beautiful rainbow slaw
Hummus
1 x 400 g chickpeas with half chickpea liquid (or water)
1 Tablespoon olive oil
1 Teaspoon lemon juice
1 teaspoon garlic
½ teaspoon ground cumin
¼ teaspoon salt
Blend all the ingredients into a smooth paste
Pickled Red Onions
3 – 4 large red onions, thinly sliced
2 cups vinegar
1 tsp salt
1 tsp sugar
Mustard seeds
Bay leaves
Pour boiling water over the diced onions in a colander and allow to drain
Bring the vinegar, salt and sugar to a simmer and turn off the heat. Allow to cool slightly
Pack the onions tightly into a glass jar, add mustard seeds or bay leaves or both
Pour the vinegar solution into the jar and seal it
